Tonight’s sunset

Happy Friday night,

How is everyone doing on this amazing warm and wonderful evening? We have officially begun the weekend. Any plans? Shoot me a text or drop me a comment, I’d love to hear from you.

My weekend will begin with catching up on some laundry and cleaning my kitchen, then I’ll head to the store to get the ingredients for my lemon blueberry cheesecake that I will be sharing with my gals at the tea on Sunday.

Today was a great day. I made Drunken Noodles with chicken tonight for dinner and if I do say so myself, it turned out pretty darn amazing. I’ll be venturing out on making more Thai this coming week. There’s something about Thai food that doesn’t get my acid reflux all in an uproar and it’s yummy. I’m excited to keep trying out new dishes. If you have any Thai recipes you’d like to share, I’d much appreciate it.

I love trying new recipes and I thoroughly enjoyed my adventure through the 88 Ranch Store. I walked up and down every isle in amazement of how different the food choices were. I can only imagine the dishes I can make. I think there’s endless possibilities.

Tomorrow I’ll be making mango sticky rice along with Pad Thai, I think. My new go to are rice noodles. They are amazing. I feel like I’m eating pasta, however, rice noodles are so much more healthy for me. No gluten.

After dinner I went out back and enjoyed another lake sunset. I don’t think I’ll ever tire of seeing the sun set over the water. Each one similar, yet different.

  1. Heaven is here now ~ the world feels clean and bright, happy and new.
    It’s a new world, even though outwardly things look the same.
    I went out shopping and noticed the different right away.
    I’m even a new person now, reborn, fresh like a child.
    I guess you all may feel it too.

      Everyone loved the Thai food I made. One dish was a tad bit tooooo spicy for me. I didn’t try the Thai Tea. I was concerned about the sugar, but that sure did look good too.
      I should have taken photos of the Thai dishes. Oh well, I’ll try and remember this weekend since I’ll be making it again.
      Heading to San Diego today for more testing, then I’m done I believe until the 23rd. Thank goodness.

      Overall, it was a fabulous weekend. Sititng outside, enjoying God’s creations was probably my favorite part, however, everything else was pretty amazing too.

  3. Mountains? Lol. A little Pacific Northwest snobbery. Feels like SoCal here today though. 90s. Yuck. Take care and I love Thai, but am fond of Indian a little bit more.

    1. Yes, we do have some pretty amazing mountain views too.
      I’ve never had Indian food. What do you recommend to try first? I’m on a journey to better health and I want to try a variety of wonderful dishes.

      1. Well, I’m a vegetarian, so I love what is called Palak Paneer. But most people that eat meat like Lamb Curry and Tandoori Chicken, which is like barbecue with spices. I wouldn’t say the Indian Cuisine is especially healthy. It’s full of unsaturated fats. Very rich and heavy

      2. Thank you. I will check out these dishes and see if any sound like I can make them and give it a try. I’m not a huge fan of lamb. Actually, even though I’m not vegetarian, I’m okay not having meat in my diet too.

      3. Lamb is big in India because they don’t do beef, right? The sacred cow thing. They have a very liberal use of dairy. It’s in their tea, deserts, sauces, I even had an alcoholic Mango Lassi which is Mango, sugar, cream and alcohol. But I’m no expert. I just love the vegetarian dishes. But I sure wouldn’t eat them everyday.

        I hadn’t thought of the sacred cow. Interesting. I’ll have to look that up for a better understanding. Love learning something new
